The user's manual ('man OpenVAS-Client') includes an example of how to run OpenVAS-Client 
in non-gui mode using the '-q' switch.  'OpenVAS-Client --help' also displays a list of 
run-time switches.

I haven't tried out any of the distro packages but building openvas from source works for me.
