Do you mean why the hash algorithms given with --version no not match
the preference option you set in the gpg.conf?

"gpg --version" shows all available algorithms in no specific order.
What you give in gpg.conf is not related to that - the only requirement
is that the algorithms you give in gpg.conf must be supported by gpg and
thus shown with --version.
