Can you explain where this happens?  We have support for ed25519 since
Gpg4win 3.1.2 released summer 2018.  Any older version of Gpg4win
should not be used due to security issues.

Of course if you restrict the supported algorithm using options set by
some profile you will run into problems.  But that is a user decision -
no user should ever need to use a profile to change the standard
options.
