one way to select the default key in the crypto backend is to set
  default-key [fingerprint]
in the gpg.conf configuration file with a text editor.
(You can create the file, if it does not exist.)

The command line usage of the option is only for this very command, so
  gpg --default-key  [fingerprint] --sign ...
will work, but is not permanent. For it to be permanent is has to go into the
configuration file.

There is a newer version available which you can download on gpg4win.org.
